Sausage and Peppers Pasta


Since the new year has come my husband and I are trying to eat a little healthier.  With this comes great challenges to make something that is healthy and satisfying.  Being the food lover that I am it is really hard to let go of certain foods but I am trying to just make better choices.  While grocery shopping we picked up a package of chicken sausage to try.  I had no idea what I was going to do with it.  I am fortunate enough to still have some green peppers in the freezer from our garden this past summer.  So I opened up the pantry and started throwing this dish together.  This was a winner for our family and can easily be done with chicken. This made a ton and was plenty left over for lunches the next day.  I just love how I can open up the pantry or the fridge and create something so yummy. 


First I started off by sauteing some peppers and onions in a skillet. 



I then removed the peppers and onions and then cooked the sausage.



Then added the peppers and onions back in and cook a couple minutes together. In the meantime I had a cup and a half of penne pasta cooking in a separate pan. I added a can of diced tomatoes, these were basil, onion, and garlic tomatoes, liquid and all.  Cooked a few minutes for the flavors to come together and then added the drained penne pasta.  Sprinkled half a cup of shredded italian cheese and voila, done!

Sausage and Peppers Pasta

1 package chicken sausage
1/2 cup sliced green peppers and onions
1 can of diced tomatoes( basil, onion, and garlic)
1 1/2 cup uncooked penne pasta
salt and pepper to taste

Saute peppers and onions in a skillet. Remove and add sliced sausage and saute until done. Add the peppers and onion mixture back into the skillet.  Cook a couple minutes and then add the can of tomatoes with liquid.  Cook pasta according to directions on package and add to the skillet, stir and sprinkle with cheese.  Enjoy!
