Leslie's Chicken

While at a soccer game this past week some of us moms where talking about food.  We clearly were hungry.  One mom asked me how many times I cook dinner a week.  She said if you say seven I'll die.  I told her 5-7 times a week. This really depends on what is going on in our life on any given day. Sometimes we have to get something out due to time restraints and sometimes Moma just needs a break. We were just rattling off easy things we make for dinner and Leslie, another Mom, started telling us about this chicken recipe.  She says they make it all the time and her family loves it. She is one of the sweetest people you will ever meet. This dish needed a name, nothing was more fitting than Leslie's Chicken. I couldn't get this chicken out of my head. I really wanted to try it. I am so glad she told me about this.  I can predict this will be on our menu quite often. My daughter said  "this....is....so....yummy!"  The bacon gives this chicken so much flavor and it was super moist.

Take the desired amount of chicken breasts and wrap them with bacon. I used two slices per piece. A couple I added a half a slice on top of it. Place in a baking dish and season with pepper and I used Ms. Dash table blend.  Cover with aluminum foil and bake at 350 degrees for about 45 minutes or until chicken is done. My chicken breasts were thicker so I baked these around an hour or so to make sure they were done. Next time I may butterfly them so they don't take as long.

I think I won't be able to get it out of my head until I make it again. Hope you get to try this one really soon. Thank you Leslie...you are awesome!  We will make this for many years to come and each time we will think of you. Much Love
