Sour Cream Lemon Pound Cake


Ok, I have to admit I have a love for anything lemon.  If you are following me on Pinterest you already know I have a pin board dedicated to lemon recipes. When I saw this recipe in a church cookbook I found at Goodwill I knew this was my next recipe to try. I just love church cookbooks, they always have the best recipes in them.  Growing up my Mom on occasion would make a sour cream pound cake and it was one of my favorite treats she made.  It is just something about the sour cream that makes it so yummy. 


 All ready to go in the oven.  Notice this is well greased and floured. The Pineapple Pound Cake I made before I failed to do this well and it did not turn out pretty, it was good though. I learned my lesson because this one turn out perfect.


 My favorite part of this pound cake as well as my Mom's is this crust that it makes.  To level the cake this yummyness gets sliced off and I couldn't help but sample immediately. The best part of this cake in my opinion.  My Mom is still holding out on me about her recipe. I know in time this will be handed down to me, in the meantime, I can't wait until she makes one again.  Who knows, maybe her recipe will make into my first cookbook. A girl can dream, right?


 While still warm spoon the lemon glaze over the top, oh my!





Sour Cream Lemon Pound Cake

2 sticks butter (1 cup)
3 cups sugar
6 eggs
1 (8oz) container sour cream
1/4 tsp baking soda
1 tsp lemon extract
3 cups sifted flour
1 cup confectioners sugar
1 lemon

Sift flour and measure. Re sift twice more with baking soda. I just use a whisk to stir it up instead of sifting.  Set aside. Cream butter and add sugar slowly, beating constantly. Add eggs 1 at a time. Stir in sour cream. Add flour mixture, about 1/2 cup at a time. Stir in lemon extract and turn into a well greased and floured 10 inch tube pan. I also added about 1 tsp of lemon zest. Bake in moderate oven at 325 degrees for 1 1/2 hours. Cool in pan about 5 minutes before loosening cake around edge with a dull knife. While warm, glaze with 1 cup confectioners sugar mixed with the juice of one lemon.

With All My Heart Cake


Today I am sharing a very special cake with you.  It is not the recipe that makes this cake special but the story behind this cake. You see, my birthday is three days after Valentine's Day and my Mom would always make our birthday cakes.  My parents always struggled the first few months of the year so there wasn't much money when it came time for my birthday. Now don't get me wrong, my parents did the best they could with what they had to work with. I really didn't understand this when I was younger but as I have become a parent I know those struggles all to well. Of all the birthday cakes I had growing up, this is the only one I remember.  My Mom, I am sure, wanted to make this cake extra special for my special day, I felt like a million bucks!  She still remembers this cake as much as I do.


Mix a yellow cake mix and divide between two cake pans. I baked these in a round cake pan and a square pan.


Place the square cake at an angle and cut the round cake in half and piece together your heart.


Frost with icing and decorated with Red Hots.  My Mom used the cinnamon hearts for my cake but I could not find them anywhere.  I searched four local stores and found these in the last one.
Do they not make them anymore?? 

I love you Mom with all my heart and thank you so much for making me feel extra special so many years ago. I will continue to make and share this cake with my babies and hope they feel the love as much as I did every time you made me a cake for my birthday. 



Served Up With Love!

With All My Heart Cake

1 box yellow cake mix (or any flavor)
2 containers of white/vanilla frosting (or make your own)
1 bag of Red Hots Candies (or hearts if you can find them)

Mix cake according to directions on the box. Bake in one round cake pan and one square pan according to directions on box. Allow to cool, place square cake on platter diagonally and slice the round cake in half and place on each side at the top.  Frost with icing and place Red Hots on the cake. Enjoy!

Warm Lemon Pudding Cake


When I asked my son what he wanted for his 16th birthday cake he said lemon.  I had seen this recipe on Pinterest and immediately showed it to him.  He said YES that is what I want! This recipe comes from a fellow blogger who I had been admiring long before I ever ventured into the blogging world, Mandy's Recipe Box.  I love anything lemon and have a pin board on Pinterest just for lemon recipes. We had our family over on his special day to celebrate.  I made the cakes just before everyone was to arrive so they would still be nice and warm.  We served with vanilla ice cream.  Oh my, this was so good.  I made 2 of these to share with family and only had a little bit of one left.  I have been thinking about this cake ever since.  I bought everything I need to make another one sometime really soon.

It is really hard to believe that my son is now 16 years old. Where did the time go?  I still remember how exciting and scary it was the day I went in the hospital.  My doctor decided to induce me so I knew when I was going in.  We were told a couple of times prior to delivery that he was actually a girl.  EVERYTHING I had was pink or girly, imagine my surprise when after 23 hours of labor the doctor tells me, its a boy!  We were not prepared at all for a boy.  I am one of three girls and had no idea how to take care of a boy.  Everyone was surprised and excited.  Luckily, we already had a boy name picked out for him. My Dad was not there waiting in the waiting room with everyone else.  My first call was to my Dad.  I could hear in his voice the smile on his face, especially when I told him he was being named after him, Priceless!  My son was the first boy in my family, and was for 10 years until my nephew was born.  He has a very special relationship with his grandparents and spent many days with them while I worked.  I am so happy he has such a special relationship with them, I wouldn't want it any other way.  I am so proud of the young man he is becoming.  I love you son.




Warm Lemon Pudding Cake-Mandy's Recipe Box
1 pkg yellow cake mix ( 9x13 size)
Ingredients called for on back of cake box
2 pkg (3.4oz each) instant lemon pudding
1/3 c. sugar
2 c. cold milk
1 1/4 c. water
2 Tbsp. powdered sugar (for dusting)
Heat oven to 350 degrees. Prepare cake as directed on package. Pour into a greased 9x13 pan. Beat dry pudding mixes, granulated sugar, milk and water with whisk 2 min.; pour over batter in dish. Don't spread it. You'll fail. Place baking dish on baking sheet. (Baking sheet will catch any sauce that might bubble over sides of dish as dessert bakes.) Bake 55 min. to 1 hour or until toothpick inserted in center comes out clean. Cool 20 min. (Sauce will thicken slightly as it cools.) Sprinkle with powdered sugar. Serve warm. Refrigerate leftovers
