Slow Cooker Roasted Chicken


It is no surprise how much I love using my slow cooker if you look at my recipe index. I have a bunch of recipes there and I use them at least a couple times a week. I used to put my crock pot in a cabinet when I wasn't using it but it is now a fixture on my counter. As soon as I put it away, I was pulling it back out. I would really like to get a bigger one though. That way when I make soups or stews in it I can make more.  I like the fact that you can take just a few minutes in the morning and by dinner time your have a yummy, flavorful meal ready to go. Working full time and having two kids that is exactly what I need on my side. When we were kids my Mom would roast her chicken in the oven. It was so good too. I will from time to time do the same but I like that it just cooks itself here in the slow cooker. I also add potatoes and carrots to this, but time constraints I couldn't do that this time. 



This chicken usually falls off the bone but this one stayed together when I moved it to the plate. Sorry for the bad photo, I wasn't expecting to take one. We usually eat the breast pretty much the first meal and then I will take the remaining chicken and make into a casserole, soup, stew, or whatever hits me. I have stretched this before to make three really good meals. Just depends on your family and the size of the bird.  The drippings make a great gravy or a good base for a soup. You could also freeze the remaining meat and the drippings for another time.  The possibilities are endless with roasting a chicken. Slow Cooker Roasted Chicken

1 Whole Chicken, cleaned of extras
salt and pepper
1/4 cup sliced or chopped onion
Mrs. Dash Seasoning Blend (my favorite seasoning)

Spray slow cooker with cooking spray for easy cleanup. Place rinsed bird free of all the extras in your slow cooker. Add onion and season with your favorite seasonings. Cook on low for 6-8 hours. Enjoy!
