Chocolate Chip Cookie Pie



I have been trying to get this recipe posted for so long. I made this pie for Mothers Day and took it to my Mom's for a cookout we had. Everyone raved about this and loved it! Life has been super crazy for us right now. Work and life have just kept me super duper busy.Balance is something I am having a hard time with. Please bear with me as I try to get it all worked out. I am trying to get my photography business going, my niece is getting married this Saturday and I am photographing her wedding. I want it to be just right. I think I over think things way too much and I just need to let my creativity flow. So we have a busy weekend coming up, thank goodness it is a holiday weekend. I will need the time to rest up. So until I can find my balance I hope you can stick around and try this super easy, but oh so yummy pie! A good scoop of vanilla ice cream is a must and don't forget the drizzle of chocolate syrup. Hope you enjoy as much as we did!

Chocolate Chip Cookie Pie
Recipe adapted from Life as a Lofthouse
  • 1 unbaked, 9 inch pie crust
    2 large eggs
    1/2 cup flour
    1/2 cup white granulated sugar
    1/2 cup packed brown sugar
    3/4 cup real butter, softened
    1 cup semi-sweet chocolate chips

    Preheat oven to 325 degrees. Beat eggs in a large bowl and beat on high speed until their foamy. ( about 1 minute)  Beat in flour, and both sugars. Beat in butter, and then stir in chocolate chips. Carefully spoon into the unbaked pie crust. Bake for 55 minutes. (check for doneness by inserting a knife halfway between center and edge and it comes out clean)  Let cool atleast 30 minutes to an hour before slicing! Serve with whipped cream or ice cream
