Stuffed Peppers has always been a favorite of mine. I don't really remember my mom making them when we were growing up but my mother in law did. I was always super giddy when I knew that is what she was making for dinner. My husband and I are high school sweethearts and when we started dating neither one of us had a car.

My parents and his parents, and friends, and whoever we could get would take us to each others house. I always loved when his mom would make stuffed peppers. It was my absolute favorite time to visit. I always made sure that was the time I came over to his house.

Fast forward 30 years later and both sets of parents are now gone. I have been super blessed to have both my mom and his mom's recipes in my possession. And one of those recipes is for her stuffed peppers. I have yet to make her recipe for stuffed peppers. I know they will never have all the love she put in hers. My only hope is that when I do make them, I can feel some of her love around us.  I simply adored her.

This recipe is super easy to make. It has all the flavors of a stuffed pepper. And who doesn't love a good casserole? Fancy enough to serve as a Sunday dinner or humble enough to serve on any weeknight. Your family is going to love this casserole, I promise.

Stuffed Pepper Casserole

This casserole has all the flavors of stuffed peppers without all the work. An easy recipe that is good any night of the week.

ingredients

  • 1 green pepper, diced
  • 1 lb ground beef
  • 1 onion, chopped
  • 1 1/2 cup cooked rice
  • 8 oz can tomato sauce
  • salt and pepper to taste
  • 1/2 tsp minced garlic
  • 1 cup shredded cheddar cheese

instructions

  1. Cook beef, onion, garlic and green pepper in a skillet over medium heat, stirring often, until beef is browned. Add cooked rice to skillet. Pour tomato sauce over beef mixture, stir and heat through. Season with salt and pepper to taste. Add cheddar cheese to the top and allow to melt. Serve
