I am so excited to share another cookbook review and giveaway for you from Gooseberry Patch. 101 Stovetop Suppers is different than the other Gooseberry Patch cookbooks I have. This one is filled with colorful pictures of each recipe.
My husband picked out the Inside-Out Stuffed Peppers to try and I picked Sunday Meeting Tomato Soup. The funny thing is that both of these recipes resemble a favorite recipe of his mothers. When we were dating I tried her stuffed green peppers and fell absolutely in love with them. I have tried to make them since but I am unable to make them just like she does. Her tomato soup is different than any tomato soup I have ever tried. Her's has meatballs and a few noodles throughout. Nothing really much to it but I love it. I was given the recipe but my daughter lost it. I really need to get that from her again.
Inside-Out Stuffed Pepper
1 green pepper, diced
1 lb ground beef
1 onion, chopped
1 1/2 cooked rice
8 oz can tomato sauce
salt and pepper to taste
1 clove of garlic
shredded cheddar cheese for topping
Bring a saucepan of salted water to a boil. Add green pepper and cook for 8 to 10 minutes, until tender. Drain, cool slightly and chop pepper. Meanwhile, cook beef and onion in a skillet over medium heat, stirring often., until beef is browned and onion is translucent. Drain, add green pepper and cooked rice to skillet. Pour tomato sauce over beef mixture, stir and heat through. Season with salt and pepper to taste. Serves 4. **I added a clove of garlic with the green pepper, added shredded cheddar on top. I also didn't boil the green pepper first, I cooked with the hamburger and onion.
Sunday Meeting Tomato Soup
1/2 c butter, sliced
1 c fresh basil chopped * I used a teaspoon dried
2-28 oz cans crushed tomatoes
2 cloves garlic, minced
1 quart half and half
salt and pepper to taste
Garnish; croutons, shredded parmesan, or your favorite toppings
In a large saucepan, melt butter over medium heat. Add basil, saute for 2 minutes. Add tomatoes with juice and garlic. Reduce heat and simmer for 20 minutes. remove from heat, let cool slightly. Working in batches, transfer tomato mixture to a blender and puree. Transfer back into saucepan and add half and half, mixing well. reheat soup over medium-low heat, add salt and pepper to taste. Served topped with croutons and shredded parmesan cheese. Makes 10 servings.
