Banana Chocolate Chip Cornmeal Scone by Guest Blogger Lark from Lark's Country Heart


I am so happy to share with you yet another great blogging friend, Lark from Lark's Country Heart. She has been such a sweetie to lend a hand and share one of her yummy recipes with us. Her and I are kindred spirits. Many times I have thought about making a recipe and at the exact same time she has made a recipe very similar to what I was imagining. Even though she is thousands of miles away I can imagine we would have a lot to talk about around the kitchen table. I would love it if you would stop by and visit Lark and show her some love. She has wonderful recipes that are mouth watering and easy. 

These would be super yummy to make for the upcoming holidays for breakfast. I can't wait to make these soon. Thanks Lark for sharing. 

Banana Chocolate Chip Cornmeal Scone
1 C. Flour
3/4 C. Yellow Cornmeal
1/2 C. Sugar
2 tsp. Baking Powder
1 tsp. Salt
1/4 tsp. Cinnamon
1 Ripe Banana~ mashed
1 Egg
1 C. Milk
1/4 C. Oil
1 tsp. Vanilla
1/2 C. Mini Chocolate Chip
Preheat oven to 400
*also preheat your cast iron skillet
Sift together the first 6 ingredients.
In another bowl combine mashed
banana, egg, milk, oil and vanilla.
Beat until well blended.
Pour the wet ingredients into
cornmeal flour mixture. Whisk
together well. Fold in chocolate chips.
Pour this into your preheated
cast iron skillet, spread evenly.
Place into your oven on the
center rack. Bake for 16-18 minutes.
Let cool in skillet for 10 minutes
before you cut and serve.
You can serve this for breakfast,
brunch, or for Tea.
It can also make a very simple
dessert for a picnic.
