Cheddar Biscuits


What a crazy week this has been! We are yet again trying to get into a schedule since my husband is home now. He has been laid off again for the season. He works a seasonal job, second year doing so and change is always difficult for us. Just when we get in a routine, it changes.  This will make his 5th lay off in three years. Needless to say, this year has been more of a struggle than any year so far. We will make the best of it and I will enjoy having an extra hand around when I need it until he finds something to occupy his time, hopefully another job.



Our son is taking a culinary class this year and I think he has finally realized that cooking is what he likes and he is talking about going to culinary school when he graduates. Can I say that this Moma is extremely happy he has decided to do this. He has talked about being a chef since he was really little but as he got older that kind of fell by the wayside when other important things came along. He made these biscuits in class one day for an event they were hosting and he brought some home with some country ham on them. They were little mini biscuits and can I tell you I could not get enough of them.  He had decided for Thanksgiving he wanted to make these biscuits. I watched him make them and the love and care he put into them I knew they were going to be out of this world good.  We took them to my parents house and they were a hit. Everyone was making sure to grab some before they left to enjoy at home. They were that good.  He is planning to make these for our annual Christmas Eve get together and add ham. My Mom usually makes ham biscuits but he said he is taking this over this year, Mom just has to provide the ham. Sure do love that kid! I am so looking forward to what he learns in class and shares with me. He often comes home and tells me what they made in class that day. A great bonding moment when we get in the kitchen together. Looking forward to what he makes for me next.

On to the recipe.....




Cheddar Biscuits

2 Cups all-purpose flour

2 Tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 Cup cold butter, cubed
1/2 Cup shredded sharp cheddar cheese
3/4 Cup buttermilk

In a large bowl, combine the flour, sugar, baking powder, salt, and cayenne. Cut in butter until mixture resembles coarse crumbs. Add the cheese and toss. Stir in buttermilk until moistened.  Turn onto a lightly floured surface, knead 8-10 times. Pat or roll to 1 inch thickness, cut with a floured 2 1/2 in biscuit cutter. (He used a smaller cup) Place on ungreased baking sheet, he placed these side by side touching. Bake at 425 degrees for 15-18 minutes or until golden brown. Serve warm. Yields 6-8 biscuits depending on your biscuit cutter.

I imagine these would be terrific with some sausage gravy poured over them....I think it is time to make breakfast!

  4. I am trying this tonight. Planning to feed my two grown sons and hungry husband who have been working outdoors on a major house repair. I am going to double it, I hope that doubling it will not ruin the synergy of this recipe!
