Dad's Mashed Potatoes


My Dad is one of those men that can just go in the kitchen, throw a few things together, and the end result is so good.  He started making these mashed potatoes a several years ago and we all fell in love.  It is a really simple recipe that yields such a great side dish.  My kids love these potatoes and my son calls these Popa's Potatoes since his Popa makes them.  Recently my Mom called my son just to tell him they had some potatoes for him.  He did not hesitate to get off of his computer and go and get them.  They are just that good.  He is so spoiled but I'm sure they just wanted to spend a little time with him. Since becoming a teenager they do not see him as much as they used to.  I make these every so often but my Dad's are way better, he puts his love in them and we definitely reap the rewards.  So here are the potatoes that we usually have on our holiday table.


Peel and dice your potatoes.  I usually cut a 5 pound bag so we "hopefully" will have some leftovers. Place them in your pan and add chicken broth to cover. You can also add water to the broth to stretch it or use chicken bouillon cubes or granules, just use what you have.  Bring to a boil and cook until done.
Do not drain your potatoes, if you think you have too much liquid by all means take a little out.  We are gonna mix these right up in the liquid. Add some butter, salt and pepper and mix until creamy.  My Dad sometimes will add a little milk too.  It depends on how he is feeling that day. I really hope you get to try these potatoes and enjoy them as much as our family does.

Dad's Mashed Potatoes

6-8 russet potatoes
1 large can or carton of chicken broth or bouillon cubes/granules
1 stick of butter
salt and pepper to taste

Peel and cube your potatoes.  Place in your pan and cover with chicken broth.  Cook until done and add a butter, salt and pepper. Mix with a mixer until creamy. Enjoy


I want to apologize for the absence in posting.  The last few weeks have been a little crazier than normal.  I will be having minor surgery on the 15th but hope to be back up and running within a couple days.
