This soup was an absolute hit with the family. I'm not going to lie, ever since I was a little girl I have loved tomato soup out of a can and grilled cheese sandwiches. You really can't have one without the other in my opinion.

I would buy the large family size cans and keep on hand for a quick dinner on a busy night. My kids love it. I wasn't sure how the family would react to this homemade version since we all love the canned variety so much.

We eat some form of soup pretty regularly during the cold months. In fact, at the time of writing this, I just made another BIG pot of my Moma's Vegetable Soup to eat on for a couple of days. Whenever there is snow or blustery cold temps in the forecast, I start thinking about what kind of soup I'm going to make.

Of course, we serve this soup with a grilled cheese sandwich. I took it a step further and made them into croutons. Grilled cheese croutons y'all! Oh my word, pair that with Parmesan cheese and this grown up version has become a menu staple.

Creamy Tomato Soup

A thick, creamy, and super flavorful tomato soup that is so easy to whip up, you will never miss your go to canned soup.

ingredients

  • 1/2 cup butter
  • 1 cup  fresh basil chopped  (can also used dried)
  • 2-28 oz cans crushed tomatoes
  • 2 cloves garlic, minced
  • 1 quart half and half
  • salt and pepper to taste
  • Garnish; croutons, shredded Parmesan, or your favorite toppings

instructions

  1. In a large saucepan, melt butter over medium heat.  Add basil, saute for 2 minutes. Add crushed tomatoes and garlic. Reduce heat and simmer for 20 minutes. remove from heat, let cool slightly. Working in batches, transfer tomato mixture to a blender and puree.  Or use an immersion blender. Transfer back into saucepan and add half and half, mixing well.  Reheat soup over medium-low heat, add salt and pepper to taste. Serve with your favorite toppings.
