While everyone is going crazy over pumpkin spice everything, I am over here just waiting for the peppermint mocha. The first sighting of it in the stores gets me all giddy with excitement.
I almost started to do a dance when I broke around the corner in and saw the International Delight® Peppermint Mocha Coffee Creamer just sitting there waiting for me! Thankfully, there wasn't anyone in my way to knock over to get to it. It was located in the dairy section in our local store and in a special display so I was sure not to miss it.
Every Christmas season my two sisters and our mom get together and go Christmas shopping together. It can be quite crazy with all of us wanting to go in different directions but we always find a way to make it work. Since we are all older and have our own children it is harder to get together with just us girls. That is what makes this shopping trip even more special. A must to make it through our marathon shopping trip is to stop and grab a cup of peppermint mocha. It is just something about hanging out together over that cup of coffee that made the day even more special.
As I was drinking my morning coffee I started thinking about what else could I make using this flavor and I had a light bulb moment - Peppermint Mocha Cheesecake Dip!
Peppermint Mocha Cheesecake Dip comes together pretty quickly. Making this a great dip to serve to company that just happened to stop by. Besides, is there anything better than sharing a cup of coffee (and this dip!) with your friends and family?

8 oz cream
cheese, softened

Tablespoons International Delight® Peppermint Mocha Coffee Creamer
7 oz
Marshmallow Creme
8 oz
container of whipped topping, thawed
1/2 cup mini
chocolate chips
Chocolate
graham crackers or pretzels for dipping
instructions
Mix cream
cheese, creamer, and marshmallow creme with a mixer until combined. Fold in
whipped topping and add mini chocolate chips. Serve with chocolate graham
crackers or pretzels.
My crock pot is by far my favorite appliance in the kitchen. So naturally I was super excited for my friend Judith from The Midnight Baker when she announced she was writing a crock pot cookbook. I couldn't wait to get my hands on it and try it out.
There are so many wonderful recipes, I had a hard time picking one to make first! So, I opened it up and just decided I would work my way through, starting with an appetizer.
Whenever we host a party, the fun is always centered around the food, especially the hot dips. This Hot Jalapeno & Chile Popper Dip is by far my most favorite hot dip to date. It's creamy, cheesy, and packed with a bunch of flavor.

When I was a little girl I used to spend much of my time at my grandparents house. My grandfather passed away when I was only 12 and my grandmother was already sick with Alzheimer's and in a nursing home at that point.
Our activities always included a ride to the post office to get the mail and a stop at the local grocery store to drop off coca cola bottles and pick up more to drink. It is funny how those simple little things bring me so much joy looking back.
On one occasion my grandfather said we were going to get some apples and I just assumed we were going to the local grocery store but we didn't stop there. He kept driving and we ended up at someones house that he knew. They had a bunch of apple trees and so we loaded up on apples. The details are rather blurry as to where it was or what we did with the apples after we took them back home.
For all I know it could have just been a dozen apples but at that age it seemed like we picked the entire tree. I carry that memory in my heart and cherish that I was able to spend that time with him. I can still hear his voice, see his face, and feel his love all around me. What an honor to have such a great man as my grandfather.

Toffee Apple Dip is THE party dip of FALL that will fly right off of the table!

ingredients:
8 oz package cream cheese, softened
1/2 cup brown sugar
1/4 sugar
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
1/2 cup toffee bits
instructions
Combine cream cheese and white and brown sugars, mix well. Stir in vanilla and pumpkin pie spice. Stir in the toffee bits, reserving 2 tablespoons for the top. Serve with sliced apples or graham crackers.
Hawaiian Dip is a creamy, sweet tropical dip that will make you feel like you are on a sandy beach somewhere. Perfect to take to parties, potlucks, or just because. Its like a Pina Colada in dip form.
Summer days have turned into chilly fall days here. I love fall but also I am missing the warmer days of summer. Pineapple and coconut are two of my favorite things to eat (or drink) together. So naturally when I come across something with these ingredients in it I know I need to try it out. This is a super simple dip to whip together at the last minute. I used vanilla wafers but I am sure anything would be good with this dip. Pretzels, pita chips, graham crackers, the list goes on. So the next time you are looking for something a little different to feed a crowd, look no further than this dip.
Hawaiian Dip
8 oz. cream cheese softened
2 1/2 cups sweetened coconut
20 oz. can pineapple
(chunks or crushed)
nuts or cherries to top dip with
Blend all ingredients together in food processor to crush up
pineapple and coconut pieces. Refrigerate at least 30 minutes before serving. I served with vanilla wafers but the options are endless.
The name says it all, Pumpkin Pie Dip! The first time I had pumpkin dip like this was at a family gathering at my aunt and uncles house. I just couldn't get enough of the stuff.
Although my aunt and uncle have passed on, I still remember how delicious that dip was. I am not even sure if Mom got the recipe from her or not but I knew I needed to come up with one so we could enjoy it anytime the cravings hit!
If any of you have been following my blog for a while then you know my family HATES cream cheese. So whenever I find a great recipe that has cream cheese in it, I know I can't serve it around my family. I have to save those recipes when they are not around I guess. Luckily, this recipe does not have any cream cheese in it so the entire family can eat this with me. Not that I would eat it all by myself or anything.
This Pumpkin Pie Dip is perfect to serve at any party in the fall. Just set out some apple slices, graham crackers, or ginger snaps (my favorite) and watch everyone dig in. Because you know, everyone hangs out around the dip!
1 can of pumpkin puree 1 small box of vanilla instant pudding 1 8 oz. container of whipped topping 1 tablespoon pumpkin pie spice A few dashes of cinnamon for garnish Mix all ingredients together and chill. Add a few dashes of cinnamon. Serve with graham crackers, apples, or ginger snaps.
This fruit dip I will have to say is quite addictive. I love this stuff and usually whoever eats it feels the same. This recipe I stumbled upon years ago and I have been making it ever since. My friend who does some catering also makes this recipe. In fact there have been several times she has sent me a text or an email needing it. I thought maybe it was time to put it on here to share with everyone. It is really good with any fruit you have on hand.
So the next time you decide to have fruit at your next get together or you just want to add a little something special into your child's lunchbox, don't forget this dip. Your family will love you for it.
Fruit Dip
1 cup of whipping cream
½ cup confectioner’s sugar
1 teaspoon vanilla
¾ cup sour cream
Variety of fresh fruit, cut into bite size pieces
Mix whipping cream with confectioner’s sugar with a mixer
until firm. Fold in vanilla and sour cream. Enjoy with fresh fruit.
