I tend to buy strawberries, blueberries, raspberries, and blackberries quite often. I find myself buying those wonderful berries in the grocery store telling myself I am going to make something with these only to find myself throwing them away because they went bad. Do you ever do that?  I hate to think how much money was wasted throwing them in the trash. My fridge needed some major cleaning out. I grabbed these berries thinking I had another day or so. To my dismay, the blackberries were all bad and had to be thrown out. I had to act fast to do something before they all went bad.

What is a girl to do with all those berries?  Make a cobbler of course! I just purchased this huge cast iron skillet and thought that would be perfect. I went through all the berries, rinsed them, and cut up the strawberries into smaller pieces. Placed them into the skillet and splashed a little lemon juice on them ( I had to do something with that too) Spooned the topping on and into the oven it went. This came out of the oven just as we were finishing up dinner. I just so happened to have some vanilla ice cream on hand.. The cold ice cream and the warm cobbler was perfect. The berries made a wonderful sauce to spoon over the ice cream too.

Now I need to buy more berries.


Mixed Berry Cobbler

3 cups of assorted berries (I used strawberries, raspberries, and blueberries)
Juice of 1 lemon
1 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon of salt
1/2 cup unsalted butter, softened
3/4 cup packed light brown sugar
1 teaspoon of vanilla extract

Go through all the berries carefully making sure there are no bad berries. Rinse them off,  I placed them all into a colander and rinsed them at the same time. Cut the strawberries into smaller pieces so the berries all cook the same. Place into the skillet squeeze the lemon juice over the berries. Combine in a separate bowl, flour, baking powder, and salt. Beat butter, brown sugar, and vanilla with a mixer until well blended. Add in the dry ingredients until mixture resembles course crumbs. Drop dough evenly on top of berries.  Bake at 375 degrees for 30 minutes or until bubbly and brown. Serve warm with a scoop or two of vanilla ice cream.

My Mom has been telling me about this great vegetable stand she frequents and about the nice gentlemen that is working it. He told her she could come and pick some blackberries to make some jam. So we made a plan to go picking. We went on this past Saturday and picked a bucket load. I mean seriously, a huge pot full. We are getting together to make some jam in a bit but I brought some home to bake with. We went with the whole family. My Mom and Dad, me, my daughter, my sister and my two nephews. We had to fight the June bugs, the gnats, the mosquitoes and all the vines and tall grass but we had fun. The kids were laughing and playing and enjoying themselves. My only hope is that they remember that little memory for years to come. Of course, I didn't want to carry  my good camera and ruin it and wouldn't you know it, my phone battery was dying so I couldn't get any pictures of us picking but that is OK. I have that in my memory bank now.  Growing up we had a blackberry bush that sat at the corner of our house. Many times we would wind up in the middle of that bush after wrecking on our bikes. My parents eventually got rid of that bush, but our memories are still there. Ask anyone of my sisters about it and they will tell you the same thing..."I wrecked my bike in that bush all the time"  It was worth it for the memories.

I have been trying to get this recipe posted for so long. I made this pie for Mothers Day and took it to my Mom's for a cookout we had. Everyone raved about this and loved it! Life has been super crazy for us right now. Work and life have just kept me super duper busy.Balance is something I am having a hard time with. Please bear with me as I try to get it all worked out. I am trying to get my photography business going, my niece is getting married this Saturday and I am photographing her wedding. I want it to be just right. I think I over think things way too much and I just need to let my creativity flow. So we have a busy weekend coming up, thank goodness it is a holiday weekend. I will need the time to rest up. So until I can find my balance I hope you can stick around and try this super easy, but oh so yummy pie! A good scoop of vanilla ice cream is a must and don't forget the drizzle of chocolate syrup. Hope you enjoy as much as we did!

Chocolate Chip Cookie Pie
Recipe adapted from Life as a Lofthouse

• 1 unbaked, 9 inch pie crust
  2 large eggs

  1/2 cup flour

  1/2 cup white granulated sugar

  1/2 cup packed brown sugar

  3/4 cup real butter, softened

  1 cup semi-sweet chocolate chips

  
  

  Preheat oven to 325 degrees. Beat eggs in a large bowl and beat on high speed until their foamy. ( about 1 minute)  Beat in flour, and both sugars. Beat in butter, and then stir in chocolate chips. Carefully spoon into the unbaked pie crust. Bake for 55 minutes. (check for doneness by inserting a knife halfway between center and edge and it comes out clean)  Let cool atleast 30 minutes to an hour before slicing! Serve with whipped cream or ice cream
