Easy Lemon Cake

This easy lemon cake is one of my go to recipes when we are going to a family function and I need to bring a dessert.  I originally found this recipe in a Kraft Food and Family magazine.  I have made this cake several times and quite a few of those times the kids helped my make it. This time was no different, Kylee helped me with the baking of the cake part.  She was busy eating a snack when I finished it, but Dylan was in the kitchen with me then. He took a few of the photos for me.  Now if I could just get these kids to wash the dishes for me that would be great.  Kylee would without hesitation but I do not think they would be clean, she loves playing in water and I am sure my kitchen would be flooded. We had horrible weather yesterday but today has been beautiful.  I love seeing everything so green and blooming.  Although my allergies are not liking all the pollen, the plants are thriving. I stepped out to take a few pictures and realized I have a lilac bush growing in my back yard, at least that is what it looks like.  I have lived here for years and this is the first time I really noticed them.  

They smell so good and the butterflies are loving them.

This is from my Dogwood tree I have in the front yard.   They have really bloomed out the last couple of days.  You should stop and notice all the beauty nature has to offer. 

  Lets get to the recipe.....

(Lemon cake mix, eggs, oil, water, instant lemon pudding, whipped topping)

Pour the cake mix in the mixer and follow the directions on the box.
I had Kylee pour the oil and water in.  She loves being my little helper.
She always wants to crack the eggs. Thankfully we did not have too bad of a mess.  She is getting to be such a big girl.

Grease and flour two cake pans and divide the cake mix between the two pans. Bake in a 325 degree oven for about 30 minutes.  I am sure the directions are different for each brand of cake mix so please follow the directions on the box.   Bake the cake until a toothpick inserted in the center comes out clean. Cool on wire racks.
Meanwhile mix the pudding according to package directions.
Place one cake layer on a plate or cake stand.  Spread half of the lemon pudding mix on the first layer.  Place second layer of cake on top and finish with the remaining pudding. 
Frost with whipped topping.  Keep in the refrigerator.  This cake would make a great addition to your Easter menu.

Easy Lemon Cake

1 package lemon cake mix (oil, water, and eggs)
2 packages instant lemon pudding mix (3.4 oz)
1 1/2 cups cold milk
1 tub (8oz) whipped topping

Prepare cake mix and bake as directed on package. Cool on wire racks, prepare instant pudding, spread between cake layers and on top.  Top with whipped topping.  Keep refrigerated.
