A friend of mine contacted me to make her a blueberry pie for her father. I had never made a blueberry pie before but I thought I was up to the challenge. Of course, I had to make an extra so I could taste it and share with all of you. I make baked goods for friends or relatives but I always like to know it is good before I give it out. My family loves blueberries and my daughter actually ate 2 pieces of this after she ate her dinner. I used frozen blueberries because honestly I could not justify buying the fresh ones on sale at Food Lion for $2.50 for the smallest package. It would have cost me half a fortune to make one pie. You really could not taste a difference with this pie. Tasted just like it would have with fresh. I like that I can make this year round for my family without breaking the bank. This is the first time working with frozen pie crusts. They are super good and honestly you do not realize they are frozen. I will use these from now on until I can get the homemade crust down.

Blueberry Pie

cup sugar

1/2

cup Gold Medal® all-purpose flour

1/2

teaspoon ground cinnamon, if desired

cups blueberries ( I used frozen)

tablespoon lemon juice

1

tablespoon butter or margarine, if desired

Thaw pie crusts and place one crust in a pie plate. In large bowl, mix sugar, 1/2 cup flour and the cinnamon. Stir in blueberries. Spoon into pastry-lined pie plate. Sprinkle any remaining sugar mixture over blueberry mixture. Sprinkle with lemon juice. Cut butter into small pieces; sprinkle over blueberries. Cover with top crust, trim edges if you need to. Leave a little and overlap the bottom crust and pinch. Flute the edge and put slits in the top of the crust to vent. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning. Bake 35 to 45 minutes or until crust is golden brown and juice begins to bubble through slits in crust, removing foil for last 15 minutes of baking. Cool on cooling rack at least 2 hours.
