Apple Cake

Happy Mother's Day!

I was given this recipe from a co worker who raved about how good it was.  My first thought was that my Mom has talked about my Grandma's apple cake and how good it was.  My grandmother died when I was 21, however she was put in a nursing home when I was about 12 years old, she had Alzheimer's.  I do not really remember much about my grandmothers cooking. All of her recipes have been lost, either they died with her or while we were cleaning out the house to sell they were misplaced. If any family member is reading this post and you know where her recipes are, please contact me. I would be forever grateful to you.  I have been wanting to recreate the recipe of my grandmothers for my Mom.  Long story short, I made this cake for my Mom for Mothers Day.  Although, this cake is not like my grandmothers, she really enjoyed it.  So my search will continue to find a similar recipe. I was really hoping to give my Mom and little of her mom today. I love you Mom and do not fret, I will find a recipe.



This is Mom with my son Dylan.  She has been my rock for so many years.  I love you Mom!


My grandparents, James Henry Vanlandingham and Louise Vanlandingham.  I miss you both so much!


Lets get to the recipe....


(oil, flour, sugar, apples, baking soda, salt, butter, raisins, vanilla, cinnamon, brown sugar, eggs)



Add the vegetable oil, sugar, and eggs and mix well.  It helps when you have a little helper in the kitchen, still in her pajamas at 2 pm in the afternoon.


Add raisins, granny smith apples, peeled and cored, baking soda, salt, cinnamon, vanilla, flour. After each addition stir.


This is my helper adding the vanilla.


This will be thick, spread in a 9 x 13 inch baking dish and bake for 40-45 minutes.



Just before the cake is to come out of the oven, make the glaze.  Add the stick of butter, brown sugar, and vanilla to a saucepan.  Boil for 1-2 minutes stirring constantly.  Take the cake out of the oven and pour the glaze over the hot cake.  Let cool completely. 


Served Up with Love!

Apple Cake


1 cup veg oil
2 cups sugar
2 eggs
Mix well with mixer
Add each of the following stirring in as you add each.
1 cup raisins
3 cups diced granny smith apples peeled and cored
1tsp baking soda
½ tsp salt
1 tsp cinnamon
1 tsp vanilla
2 ¾ cups flour - Stir flour in gradually until mixed well.
Batter will be thick, pour into grease 9x13 spread pat down evenly in dish.
Bake @ 350 for 40 to 45 minutes.
Make Glaze right before cake is to come out of oven.
Glaze:
1 stick margarine, melt then add
1cup packed brown sugar
2 tsp vanilla
Put in sauce pot and boil 1 -2 minutes until sugar dissolved. Stirring
Optional ¼ cup chopped pecans
Spread over top of the warm cake. Let cool and enjoy.
