Becky's Chicken Pot Pie



I am so happy today to share with you another recipe from my sister.  She has been making this pot pie for a while and I love when she shares it.  So yummy and so comforting. 


Becky’s Chicken Pot Pie

Here is a great meal sure to warm you up on this cold weekend!  This is my go to recipe that I treat my friends and family with whenever they come to visit.  It all started for me when I used to buy those store pot pies for my husband who would eat three of those little guys!  I knew there had to be a way to make a great pot pie from home without having to buy those little pies in the store.  I basically threw this mixture together into a pie shell and it was a huge success!!  And, if you all knew how picky my husband is with food, this was a major task to satisfy his palette!!   This is my special dish that I wanted to share with you all. 

Ingredients:

Pillsbury refrigerated Pie Crust

2 – 3 small chicken breasts

½ onion, diced

1 celery stalk, diced

1 can of Cream of Chicken Soup

1 can of Cream of Potato Soup

1 bay leaf

Dash salt and pepper

3/4 bag frozen mixed vegetables

 Instructions:

In a medium sauce pan, bring chicken breasts to boil with bay leaf and salt and pepper.  Cook until done, about 20 min.  While chicken is cooking, sweat onions and celery in a tablespoon of oil.  Then add cream of chicken and cream of potato soups.  Add frozen mixed vegetables.  Simmer.  Add cut up cooked chicken and mix well.  Prepare pie plate with pie crust.  Add mixture to pie crust, then top with second pie crust.  Cut slits in top crust for ventilation and bake in 425 degree oven for about 18 – 20 min or until pie crust is golden brown.  Allow to cool and serve.  Homemade mashed potatoes is a great side kick for this dish!  Enjoy!
