Sweet 'n Sour Chicken



Life has gotten so busy lately. Between work, soccer games, and just trying to keep up with the house I feel stretched way to thin.  I took today (Saturday) to just be, I didn't worry about cleaning the house or any of that stuff.  I did do two loads of laundry but that is the extent. It is now after midnight and I am thankful I took the time to clear my head a little. I am hoping tomorrow will be a much better day mentally. I think we all need those days just to chill and regroup. Life just needed to stop for a little while.  On top of all of this my car has been out of commission for over a week. We are thinking it will be covered under the extended warranty but the mechanic is extremely busy. He has promised to look at it Monday and call the warranty people with a diagnosis, if its covered they will pay for a rental and would make life so much easier for me. My hubby's truck is not the greatest and needs some work also and I do not feel comfortable driving it myself.  This has delayed his returning to work. We really need this rental or my car repaired soon.

This recipe is a winner in my house and we try to make this often. It is super simple but the end result is so impressive. The traditional sweet 'n sour chicken does not have veggies in it. I like to put these in to stretch it and to give my family a good serving of veggies. They all love it and it is requested quite often by my kids so that is a plus. 


Cube 2-3 chicken breasts and saute in a pan. Cook until done.


Add the sweet 'n sour sauce, pineapple chunks, and veggies and cook until the veggies are cooked. We use frozen stir fry veggies. While you are preparing this, make the rice. I have fell in love with Mahatma rice and make this instead of instant. Use what you have or what you prefer. Would be great with brown rice too. Prepare the rice according to directions on the package.



Serve over rice and enjoy!

Sweet 'n Sour Chicken

2-3 chicken breasts
1 bag of frozen stir fry veggies
1 12 oz jar of sweet 'n sour sauce ( I use Kikkoman)
1  can of 15 1/4 oz pineapple chunks
Rice

Cube chicken and saute in a pan until done. While this is cooking prepare the rice according to package directions.  Once chicken is done, add the sweet 'n sour sauce, stir fry veggies, and pineapple. Cook until veggies are done. Serve over rice.  Enjoy!
