Strawberry Limeade

One of our neighbors shared her lovely strawberries from their garden last week while we were pet sitting and of course I needed to use them in something wonderful. They were fantastic just picking them up and eating them like candy. I mean seriously, every time I walked into the kitchen they were calling out to me and I had to go and see what they wanted. They insisted that they needed a quality check. Yep, you guessed it, they were perfect. One by one they all passed and made it into my belly. Thank goodness the next day we were blessed with some more. Did I say how much I love my neighbors?

 These beauties were just too good to mix up and bake into a cake, cobbler, or whatever yumminess I could find. I have been on a drink kick lately so the wheels started turning when I caught sight of the limes on the counter. 



 The summer weather is definitely in full swing as we have had a few hot and humid days here this week. I can honestly say this strawberry limeade surely hit the spot in this heat. I am a fan of cherry limeade but I have to say I think this is my new favorite.

Strawberry Limeade 

1 cup fresh squeezed lime juice 
1 cup simple syrup( 1 cup sugar, 1 cup water)
3 to 4 cups of water
2 cups of washed and hulled strawberries, pureed in food processor
Lime slices, strawberries, mint leaves for garnish (optional)
Ice

Prepare simple syrup by placing sugar and water in a saucepan and heating until sugar dissolves. Remove from heat and cool. Squeeze limes and place juice in a tall pitcher. Place strawberries into food processor and blend until smooth. Add simple syrup, strawberries, and water with lime juice and stir until combined. Add ice, lime slices, and strawberries. Pour into glasses, add extra garnishes, and enjoy. 

** Tip-- You can use store bought lime juice BUT fresh is best. Besides if you are buying limes for garnish they are not that expensive.
