We are full on into to summer and heating up the house while cooking is the last thing I want to do. When Hamilton Beach reached out to me to try out their new Rice and Hot Cereal Cooker I was a little intrigued.

Growing up my mom always had minute rice on hand for whenever we had rice. Until a few years ago I was the same way. Once I realized how easy it was to make long grain rice, I haven't looked back.

With that being said, I always thought how nice it would be to have a rice cooker but I needed a reason to justify buying one.  What is nice about the Hamilton Beach Rice and Hot Cereal Cooker is it makes so much more than just rice and grains! There is also a steam basket for steaming veggies, seafood or poultry. You can also use it to simmer soups, beans, and even make those packet rice side dishes that are family favorites.  There are just so many things you can do with it. I was sold!

So I set out to make an entire meal right in the rice cooker. The temps have been soaring over 100 degrees in our part of Virginia and it was a must to keep the house cool.  It needed to be easy, budget friendly, and not too heavy.

To keep it budget friendly I used a bag of frozen stir fry veggies and a frozen bag of raw shrimp that our local store had on a BOGO sale.  All I had to do was thaw the shrimp and veggies and load it all up in the rice cooker. The directions are super simple to understand with step by step illustrations as well as troubleshooting if you run into any issues.

We absolutely loved this recipe and our daughter has already requested that we make it again and again. So that is a winner in my book. If you have been wanting to get a rice cooker, this one is perfect. And guess what? Hamilton Beach was gracious enough to give one away to one lucky reader. 


Garlic Butter Shrimp and Vegetables

1 pound large frozen shrimp
1 20 oz. bag of frozen stir-fry vegetables
1/4 cup butter melted
1 teaspoon minced garlic
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons green onion, finely sliced
Juice and zest from one lemon
White rice, uncooked

Place desired amount of white rice and water in cooking pot. Set cooker to White Rice Setting. While rice is cooking prepare your shrimp and veggies. To thaw frozen shrimp, run under cold running water in a colander. After approximately 30 minutes, place shrimp, veggies, butter, garlic, seasonings, lemon zest, and 1/2 the lemon juice in the steamer basket and place into the rice cooker. Please pay close attention to your rice cooker. Depending on how much rice you are using, it will cook faster than what is displayed on your rice cooker. And you want everything to be done at the same time. Cook the shrimp and veggies for approximately 10 minutes or until shrimp are opaque and the veggies are slightly tender. Serve over rice. For an added splash of freshness, squeeze the rest of the lemon juice on top. Add fresh lemon peel and green onions for garnish.

  1. Chicken and broccoli or mixed vegetables over rice is my favorite rice dish. But I won't turn any of it down.

  2. I truly enjoy Jasmine rice especially when fixed as stir fried with baby glazed carrots and peas and a grilled seared chicken breast with sweet chili sauce. It is an easy meal that does not take long to fix,extremely low in calories,very low sodium,filling and not leaving you feel bloated/over stuffed. I make it at least twice a week and I also have used pork and grilled fish.
