Before I head off to the store, I always check to see what coupons are available on their website. I can either load them to my MVP card (store savings card) or print them off and have on hand. A coupon for FREE Private Label Pasta with purchase of Carando Meatballs (Up to $1.50 value) caught my eye so I knew I had to give them a try.
The story behind how Carando started is quite an interesting one. It began nearly a century ago along the cobblestone streets of Torino, Italy. As an apprentice at a his local butcher shop the founder, Peter Carando, learned the Italian tradition of sausage making. With those authentic recipes, he set sail for America to begin crafting the finest meats this country had ever tasted. To this day, the company has remained true to those recipes and earned its place as one of the world's finest purveyors of Italian deli meats.
Since I wanted something quick and easy and not a lot of fuss I decided to grab a jar of marinara sauce to cut back on time. I also wanted to make this less mess and make it all in one pan. We are not blessed with having a dishwasher so all dishes get washed by hand. Seriously, how unfair is that? Sometimes I think we are the last people on earth without a dishwasher. A dishwasher is on our list of must haves when we move again. We do ALOT of dishes! Whether you are blessed with a dishwasher or not, there is no need to mess up too many dishes for this recipe.
My trusty cast iron skillet did the trick for this dish. As I said I wanted this to be all one dish. I lined the cast iron skillet with aluminum foil and then placed the meatballs in the pan on the foil and baked them. When they were done I removed them from the pan, threw away the foil and loaded the skillet back up. Easy peasy!

ingredients:
- 2 packages of Carando Abruzzese Italian Style Meatballs
- 1 jar of marinara sauce
- 2 cups of shredded Mozzarella Cheese
- 1/4 cup of grated or shredded Parmesan Cheese
- 1/2 tsp of Italian seasoning
instructions:
- Place meatballs in a foil lined skillet. Bake in a 375 degree oven for 10 minutes. Gently turn the meatballs and bake for another 10 minutes or until the internal temperature reaches at least 165 degrees. Once done, remove meatballs from the pan and set aside. Remove foil and toss in the trash. In the bottom of the skillet, pour 1/2 cup of marinara sauce. Place meatballs on top of the marinara sauce. Pour over the remaining sauce. Top with cheeses and sprinkle with Italian seasoning. Bake for 20 minutes or until cheese is melted and bubbly.
