Last week proved to be very difficult for meal planning for me. My husband decided to pick up strep throat and he so kindly shared it with me!! Honestly, we lived off of canned soup and crackers for days. I am still struggling to get back on my feet but we still have to eat. And the best way we can do that is to meal plan. So on days I still don't feel 100% at least we know what he can pitch in and cook. Since winter decided it needed to make a return after 70 and 80 degree days I found it fitting to add in our favorite soups this week. Plus, we should have plenty of leftovers for lunch the next day or two or if we need to heat for supper one night, we are all covered. I really hope this is the last blast of cold air because I am so ready for warmer days.

Crock Pot Potato Soup is an easy recipe that tastes just like Grandma's. The key to amazing flavor is bacon.
For a long time my mom would talk about my grandmas potato soup recipe. When my grandmother passed away, most of her recipes went with her. All we could go off of was my moms memory.
It took a few tries to get this recipe just right but when she told me it was the closest anyone has been able to get to my grandmas, I knew it was a keeper.
Some of you that have followed my blog from the beginning know that one of my main reasons for starting this blog was to try to recreate those recipes from my Grandmas that were lost with them.
Since I lost them when I was young, I do not really remember those great dishes they made. I relied on my parents to share that with me. I can in turn pass these "almost" Grandma recipes down to our future generations.
This can be just a little time consuming with all the chopping of the veggies but in the end it is so worth it. Bacon is the key ingredient here and makes this dish over the top.
I have used leftover ham before and it fails in comparison to the bacon. The bacon lends a great smokey flavor to this soup. Country ham biscuits are a great side kick to this soup.

ingredients
5 lb bag of potatoes, peeled and chopped
3 stalks celery, chopped
chopped onion or powder (all I had)
6-8 slices bacon, cooked and chopped
48 oz chicken broth water to cover 1 teaspoon pepper
Heavy cream, milk, evaporated milk about 1 cup or more depending on size of your crock pot
instructions
Add all ingredients into a crock pot, except the cream and cook for 6-8 hours on low. 30 minutes before its done, add heavy cream, milk, or I only had evaporated milk (evaporated milk made this really creamy and I will use that from now on)
