Grab your crock pots, you are going to want to make these Crock Pot Chili Cheese Dogs for your family very soon. With our hectic schedules, these were the perfect supper on a crazy busy day.
So to keep us from hitting a drive thru for supper on these crazy days, we need quick meals that the entire family will enjoy. Crock Pot Chili Cheese Dogs to the rescue. Before our son moved out into the world on his own, chili cheese dogs were one of his favorite meals. Because hot dogs are a fairly inexpensive ingredient it was a win-win for us. Do y'all know how much a teenage boy can eat? That boy could eat more in one sitting than the rest of the family combined.
As the hot dogs cook away they take on an entirely new flavor profile. They plump up as they soak in all that delicious chili flavor.
You can put as much or as little chili as you like on these. The best part is loading 'em up with all the fixins'!
This can easily be doubled or tripled to feed a crowd. Perfect for tailgating, birthday parties, or just any ol' weeknight supper. Just pack plenty of napkins because these are so worth the mess!
Crock Pot Chili Cheese Dogs
8 hot dogs
8 hot dog buns
2 cans of chili (with or without beans)
1-4 oz can of green chilis
1-10 3/4 oz can of cheddar cheese soup
Optional toppings: Shredded cheddar cheese, diced onions, corn chips, etc.
Place the hot dogs in the bottom of the crock pot. In a separate bowl combine the chili, green chili's, and the cheddar cheese soup. Pour over the hot dogs. Cook on low for 3 to 3 1/2 hours. Serve in a bun, topped with desired toppings.

Side dishes always seem to be the same ole, same ole here and I always look for different ideas. When I saw this recipe in Garfield, Recipes with Cattitude cookbook, I knew I had to try them. I try to keep potatoes on hand when I can because there are so many things you can do with a potato.
While the hubby was grilling burgers I got to work on these. Quick to throw together and into the oven they went. These were the perfect side and the kids enjoyed them. Short on time, use store bought frozen fries. If you are worried these will be spicy, they are not at all.
Baked Chili Fries
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon seasoned salt
3 Tablespoons olive oil (vegetable oil works too)
3 baking potatoes, cut into wedges
Garnish: catsup, ranch dressing, or your favorite fry sauce
Mix seasonings in a large plastic zippered bag. Add oil and squeeze to mix; add potato wedges. Seal bag tightly; shake vigorously to coat potatoes well. Arrange potatoes on an aluminum foil lined baking sheet. Bake at 400 degrees for 15 minutes, or until tender and golden. Make 4 to 6 servings.
**I didn't have aluminum foil or zippered bags but that did not stop me from making these. I am a firm believer in using what you have. I just added a little bit more oil on the pan before putting the potatoes on, to keep from sticking. I also added all ingredients into a big bowl and stirred them up instead of using a bag.

It is just something about tater tots that make a meal fun, right? This Chili Tater Tot comes together within minutes and is perfect for busy weeknights.
My son absolutely loves chili and cheese on anything and we eat tater tots often. So I knew this was going to be a winner with my kids.
This is one of those dump it all in and let it go kind of meals. And perfect on nights when you do not want to go to a lot of effort but still get a home cooked meal on the table. This recipe uses canned chili but you can also used leftover chili.
When I originally made this recipe it was made with only 3 ingredients. But recently I decided to spice things up and bit and add some cheddar cheese soup and some green chilis. This has been a preferred way to make it ever since. Either way you make it, its always a winner!
Chili Tater Tot Casserole
2 cans of chili without beans
tater tots
2 cup cheddar cheese
1-4 oz can of green chilis
1-10 3/4 oz can of cheddar cheese soup
Open the cans of chili and pour into either a 9 x 9 or 9 x 13 casserole dish or grab that cast iron skillet. (my favorite way) Mix in the cheddar cheese soup and the green chilis. Line tater tots on top of the chili and sprinkle cheese on top. Bake at 400 degrees for about 20 minutes or until tots are golden brown. You can also add ground beef or beans to this to stretch it a little.
