Pete's Scratch Pancakes


Happy Easter, Kylee had me up at 6:20 am excited that the Easter Bunny had left her a basket of goodies.  This was way earlier than I wanted to get up, but I had no choice. We are going to my Mom and Dad's for Easter dinner this afternoon and I am planning on making a cake, pie, and of course my macaroni and cheese.  So I had a little time to throw together a little breakfast.  Believe me cereal would have been just fine, but since I do not get to fix a warm breakfast often I pulled out my recipes.  My husband is my pancake maker, I think he just has more patience for them and they always turn out better than mine.  This time I made them and this recipe turns out good for me every time.  I have also used this recipe and added frozen blueberries and they turn out really good.  My family is a huge fan of blueberries but this time I did not have any berries, so we just had them plain.  I can imagine any fruit would be good in these.  I did take pictures but due to my tiredness and my lighting they did not turn out so great.  So this time I do not have step by step pictures.  This recipe I copied from a recipe board I am a part of, Cooking for your family. I hope you get to try these pancakes soon.


(flour, sugar, baking powder, milk, butter, eggs, salt)

Mix the dry ingredients first. Combine eggs and melted butter to the milk and slowly stir in the flour.  Let sit for 10 minutes while heating the pan.  Once the pan is ready I add a little butter to keep the pancakes from sticking.  I used a soup ladle to pour the pancakes on the pan.  You could also add to a measuring cup and pour them on too.
 

Here they are getting all bubbly, they are ready to flip.




Pete's Scratch Pancakes

2 cups flour
1 3/4 cups milk
2 tablespoons baking powder
2 eggs, beat them separately before adding to mixture
1/4 cup butter, melted
3 tablespoons sugar
1 teaspoon salt

Mix the dry ingredients first. Combine the eggs and melted butter to the milk and slowly stir in the flour.  Let sit at least 10 minutes while heating the pan. These will be high, but light and fluffy.
