Apple Cinnamon Chip Muffins





My favorite time of year is fall and I always look forward to all the yummy recipes using my favorite fall ingredients. I bought some cinnamon chips on clearance after Christmas and I had been holding on to them until I came across this recipe. Apples and cinnamon go so well together and I knew these would be a hit. I had no idea that cinnamon chips were so good. Just opening the bag, I knew they were going to be good.  My family devoured these in no time flat. I shared a few with my parents to see what they thought. They are still asking me when I will be making them again. Honestly, I am still longing for them myself. I just keep forgetting to buy more apples! 

Apple Cinnamon Chip Muffins

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup white sugar
2 eggs
1 1/4 teaspoons vanilla
1/3 cup unsweetened applesauce
1 1/2 cups chopped apples
1/2 cup miniature cinnamon chips

For the Crumb Topping
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
¼ cup chopped walnuts (optional)


Preheat oven to 375°F.  Grease a 12 cup muffin pan.  In a medium bowl, mix flour, baking powder, baking soda and salt.  In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla and applesauce. Stir in apples, and gradually blend in the flour mixture.  Fold in the cinnamon chips. Spoon the mixture into the prepared muffin pan.  In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan. Sprinkle chopped walnuts on top.  Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

I recently found out that a member of my family that just passed away always looked forward to getting her copy just to turn to my column and see the recipes I shared. I am so honored to hear that. I just wish I knew it before she passed away. You just never know who is admiring you.
