Beef and Broccoli



Recently, I have been in a little cooking rut.  I have been searching for a little bit of balance in my life and it has been a struggle. I decided to step back a little bit from blogging to find a little of that balance. It is still a huge struggle for me but it is getting better. I feel like I am spending more time doing the necessary things and no time for what brings me joy. Cooking had become a chore, no joy in that at all.

So I have decided that this new year I will spend more time doing the things I love. Cooking, writing, and photography have my heart other than my kids. So plan to see a lot more of that this year!


Lets get to the recipe....

Beef & Broccoli
Christy Jordan's Come Home To Supper

3 Tablespoons vegetable oil
2 tablespoons cornstarch
1/4 teaspoon of ground black pepper
1 lb top sirloin, cut into thin strips
1 lb fresh broccoli, cut into florets (about 4 cups)
2 teaspoons minced garlic
1/4 soy sauce (lower sodium)
Hot cooked rice for serving

Place two tablespoons of oil in a large skillet over medium-high heat. Place the cornstarch and pepper in a bowl and stir to combine. Add the beef strips to the flour mixture to coat. Transfer the coated beef strips to the hot skillet and cook, stirring often to prevent sticking, until the meat is lightly browned and no longer pink, 4 to 5 minutes. Remove the beef and set aside. Reduce the heat to medium, add 1 tablespoon of oil, the broccoli, and the minced garlic. Cooking, stirring frequently until the broccoli is tender, about 3 to 4 minutes. Return the meat to the skillet with the soy sauce and 1/4 cup of water. Cook, stirring often, until the sauce thickens, 3 to 4 minutes. Served over hot cooked rice.
