If you have been following Served Up With Love for a while then you already know how much our family eats taco inspired meals. 


Taco night just got a little more fun AND delicious with this Taco Tater Tot Casserole from Served Up With Love.


What is funny is that when we just eat tacos for dinner we always have tater tots to go with them. I am not sure why but it just works. So for years now I have been thinking of combining the two into one dish but just never took the step to do it.

When I was pregnant with our daughter all I craved was Mexican food. I really think I ate something Mexican inspired every day. Still 9 years later I still stop and pay attention whenever I see a Mexican inspired dish. Wouldn't you know it, tacos are my daughters favorite food. Do you think I had something to do with that?

When our son was little he was super picky. When I say picky, I mean he ate like 5 different foods for years. I used to think how in the world is this child going to thrive off of chicken nuggets.

It drove me absolutely crazy. Once he hit puberty it was a different story. One of the first things different he tried was tacos and he instantly fell in love.

This kid couldn't get enough to eat.  If it wasn't nailed down to the floor, he was eating it. It is funny to look back and think about how picky he was. Now he is quite the foodie and probably has tried more different things than I have.

His version of tacos is what I call lazy tacos. He takes the taco shells, crush them up and then add all the toppings, sort of like nachos. Very rarely does he eat a taco put together.

Yield: 8-10

Taco Tater Tot Casserole

Taco night just got a little more fun and delicious!
prep time: 10 minscook time: 20 minstotal time: 30 mins

ingredients

1 lb ground beef
1 packet of taco seasoning
1 16 oz can of refried beans
2 cups of crushed corn chips
1 8 oz container of sour cream
1 bag of tater tots
2 cups of shredded cheddar cheese

instructions

Brown the ground beef in a skillet over medium heat. Crumbling the meat as it cooks. Drain the drippings. Add a packet of taco seasoning along with the water called for on the package. Add the can of refried beans and cook until combined. Spray a 9 x 13 inch casserole dish with cooking spray.
Spread the ground beef mixture on the bottom. Crush the corn chips and add a layer on top of the meat/bean mixture. Next add a layer of sour cream. Then a layer of tater tots followed by the shredded cheese. Bake in a 400 degree oven for 20 minutes or until tater tots are browned. Careful not to burn the cheese.

  6. I've made this multiple times now because it's so dang good. Was looking for a taco flavored casserole when I ran across this on the Just a Pinch website. Have shared it with many friends with families who also say it's a huge hit.
