Sheet Pan Chicken Fajitas

These Sheet Pan Chicken Fajitas are super easy to make. Just dump the ingredients on the pan, mix in the seasoning, bake, and top with your favorite toppings.



I had a mess of colorful peppers from another recipe I made over the weekend that I needed to use up. Usually I will chop them up and place in a freezer bag to use in other recipes. But this time I decided it was time to have some fajitas. 


The ease of this recipe is that there are no additional bowls or dishes to clean. I did use a small bowl to mix the seasoning in before adding to the chicken and pepper mixture but you can certainly skip that and put it right on top and mix it up. 

This smelled so good while it was cooking away. When we sat down at the table I had all the toppings ready to go. You can top these with avocado, cheese, sour cream, or salsa. Which is your favorite? 















Sheet Pan Chicken Fajitas

An easy one pan meal the entire family will enjoy.

ingredients:

1-lb boneless, skinless chicken breasts, cut into strips
1-oz can of diced tomatoes and green chiles
1 medium onion, sliced
1 green, yellow, orange, and red bell peppers, each cut into strips 
2 tsp chili powder
2 tsp cumin
1/2 tsp garlic powder
1/2 tsp oregano 
1/4 tsp salt
2 Tbsp vegetable oil
12 flour tortillas

instructions

Preheat oven to 400 degrees. Place the onions, peppers, chicken, tomatoes and green chiles onto the sheet pan. In a small bowl combine the spices and add in the oil and stir. Pour over the chicken and peppers mixture. Tossing to coat completely. Arrange on the sheet pan in a single layer as much as possible. Bake for 20-25 mins or until chicken is done. The last 5 minutes of cooking place the tortillas in aluminum foil and place on the sheet pan. Moving the chicken and veggies over from one corner to place the tortillas. Serve with sour cream, cheese, avocado, salsa, or any of your favorite toppings.
