Pineapple Salsa

Grilling and entertaining season is finally here. This Pineapple Salsa is full of bright, fresh flavors and is a cinch to make with only a few fresh ingredients. Its perfect with chicken, fish, steak, or just dig in with some tortilla chips. 


The grill master of our family is my husband. If he is not grilling, he is thinking of what he can do next. After many years of not having a space for entertaining, we finally have a deck. And we have two grills on it. Yes, I said TWO! 


This salsa is so easy to throw together and is perfect for entertaining.  Using simple ingredients you can grab at any grocery store or farmers market. 


I love using the pineapple as a bowl for this salsa.  It really packs a wow with your guests and they won't be able to resist dipping those chips in there. Just cut off a 1/4 of one side so you have a little bit deeper bowl. And you may have to slice off a little on the side remaining to make it a little more level. Make sure you do not cut too deep inside the pineapple. I used a spoon to scoop it out and discarded the core. 


Fresh squeezed lime juice, ahh! So bright and refreshing. It really pulls this salsa together. 


Look at all those colors! I used orange and red peppers but use whatever you have.  Like your salsa to have a little kick, add in a little chopped jalapenos. This salsa is so good by itself with some chips. Or you can top grilled chicken, steak, or fish. And for all the cilantro haters, because you either love it or hate it, just leave it out. You can simply substitute with parsley. I promise the salsa police will not show up 😁

ingredients:

1 cup pineapple, diced
1 cup pepper, diced (variety of color)
1 cup roma tomatoes, diced
1/4 cup cilantro, chopped
1/4 cup minced onion
Juice of 2 limes
Optional, 1 tbsp diced jalapenos


instructions

Place the chopped pineapple, peppers, tomatoes, onion,  and cilantro in a bowl. Juice the limes and stir.  Pour into a serving bowl or pineapple. Serve with grilled chicken, steak, fish, or with tortilla chips.
