Our family is big on Mexican inspired recipes. They are always in our meal rotation and hit our dinner table at least one night a week. When our son was little he was super picky. I mean like, eat 5 things total picky. That is until he finally tried tacos. He loved them so much he wanted to eat them all the time. When I was pregnant with our daughter I craved Mexican food and ate it every chance I could. If she had been born sucking on a taco it would have made total sense. Of course, it is her absolute favorite food. So you can imagine over the years we have tried many different Mexican inspired recipes. And we have loved each and every one. But I can't keep all this deliciousness to myself. So I've put together a great list of Mexican recipes from appetizers, soups, casseroles, and everything in between.
