The 4th of July is right around the corner! How did that happen? It seems like once the kids get out of school the summer just starts to go by really fast. These cupcakes are perfect for any of the patriotic holidays during the summer.

Most of the time she will help me mix them up and then she disappears until the fun part comes of decorating them.

Is there anything more delicious than cream cheese icing? You can certainly use buttercream if you are not a fan of cream cheese. My extended family would not be happy with me if I served these with cream cheese icing.

Yield: 1 dozen

Patriotic Cupcakes

Celebrate all things red, white, and blue with these Red Velvet with cream cheese icing Patriotic Cupcakes. 

ingredients:

Cupcakes-
2 ½ cups all-purpose flour
1 ½ cups sugar
1 tsp baking soda
½ tsp salt
1 ½ tsp cocoa powder
1 ½ cups vegetable oil
1 cup buttermilk
2 large eggs
1 ½ tbsp red food coloring
1 ½ tsp white vinegar
1 tsp vanilla extract

Frosting-
8 oz. cream cheese
½ cup butter
2 tsp vanilla
3 ½ cups powdered sugar

instructions

Preheat your oven to 350 degrees and line a muffin tin with cupcake liners. In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder. In a separate bowl, mix together oil, buttermilk, eggs, food coloring, vinegar, and vanilla. Slowly add the dry ingredients to the wet ingredients, mixing well until combined. Fill cupcake liners ⅔ full. Bake for 18-20 minutes. Meanwhile, in a large bowl mix together cream cheese, butter, and vanilla. Slowly mix in powdered sugar until ingredients are combined and frosting is formed. Allow the cupcakes to cool completely before frosting. Add the frosting to your cake decorator or piping bag with an icing tip, and frost the cupcakes. Finish with patriotic red, white, and blue star sprinkles. Enjoy!
