I received so many wonderful messages and comments about how much y'all loved What's for Supper Sunday last week. I am so glad this new feature is helping all of you come up with your meal planning for the week. Last week our daughter caught a nasty virus, basically just a bad cold. Well, she shared her germs with her father and I so we have been a little under the weather for a few days. Even though we both have felt crappy, we have certainly enjoyed catching up on some Netflix. And I guess I needed to take a break too.
So for this weeks What's for Supper Sunday I decided we needed some good ol' comfort food. As always, we are basic with the side dishes. Depending on what we are having, it is usually a veggie of some sort, a bread if appropriate, or potatoes or rice. Nothing fancy, just whatever we feel like that night. I hope you find a little inspiration here to plan out your week of meals. And of course we need a few sweet treats for the week too. Have a great week friends!
Happy Friday! I love when Friday rolls around so we can share all this deliciousness with you. We had some wonderful features this week. Some good ol' comfort food to boot! I am the hostess with the mostess this week. These Crock Pot Shredded Beef Tacos have become my new favorite recipe. So kick those heels up and grab a bite to eat! Let's get to it shall we!
The most requested meals at our house are those that are some kind of taco inspired dish. So you can imagine I need to come up with a lot of different recipes to change things up. These Crock Pot Shredded Beef Tacos have become my new favorite.
The recipe happened kind of by accident. Once a month we head to a warehouse club to buy the bulk of our meat when we are able to fit it into our budget. It had been a long day of shopping so when I separated the meat to freeze I forgot to write on the freezer bag what was in it. Normally I can figure out what it is but this particular time, we only had smaller bags so I had to ram it all in.
So fast forward to a day I decided we were going to have steak on the grill. I grabbed the package of steaks out of the freezer. As it thawed I soon realized I had grabbed a smaller beef roast. Ok, now what am I going to do with this? So I grabbed the correct package of steaks out the freezer to thaw (cause this moma wanted steak) and put the roast back in the fridge until the next day.
I grabbed the crock pot and started loading it on up. I wasn't in the mood for our normal Crock Pot Roast Beef (one of my favs!) so I let the wheels turn in my head trying to figure out what to make. As I searched the pantry to see what I could throw together, it was like an ah-ha moment when I saw the can of rotel. Tacos it is!
With just a few simple ingredients, that beef roast turned into something ah-mazing! Perfectly seasoned and full of a ton of flavor. When it's time to eat, set out all the toppings and let the family build their own. There were thumbs up all around. When tacos are involved, fun just happens!! (And those leftovers make a great topping for nachos...just sayin')
