Sometimes the easiest of meals can seem a little daunting. A frittata just sounds too complicated by the name but I can assure you, this one is easy. Basically a frittata is a large omelet cooked in one pan. Who doesn't love just messing up on pan? You can really just throw anything in here and it would turn out good. You will want to cook this just a bit on the stove top and then place in the oven. Make sure you use a pan that is oven friendly. I like to use my most favorite pan, my cast iron skillet. With a simple change up of ingredients this recipe can be transformed into something different. The possibilities are endless. Perfect for breakfast, brunch or even dinner. I think eating breakfast food for dinner tastes much better than it does first thing in the morning.

Smoked Sausage Frittata
1 package of smoked sausage
1 small green pepper, chopped
1 small onion, chopped
12 eggs
1 ½ cups of sharp
cheese, grated
Salt and pepper to taste. (Sausage can be salty, add
sparingly)
1 tablespoon of olive oil/vegetable oil
Chop the smoked sausage link (I chopped into a small
dice). Chop the green pepper and onion
and add into an oven safe skillet with a tablespoon of olive oil along with the
smoked sausage. Cook in the skillet until lightly brown. In a separate bowl add the eggs, cheese, and
salt and pepper. Add the egg mixture into the skillet and move the sides of the
eggs to the middle to allow more eggs to cook. Do not scramble the eggs. Cook for 3-4 minutes and then place in a 375
degree oven for 5-10 minutes. Ovens vary and some may take longer. Make sure
the eggs are cooked. The middle takes the longest to cook. Insert a knife to
check for doneness. You can invert this
onto a serving platter or serve directly out of the pan.
Breakfast casseroles are one of my favorite things to make. My usual recipe is my Sausage and Egg Casserole . We have recently started having breakfast meetings at work and trade off on who brings breakfast each time. When it came time for me to bring a dish I didn't want to bring my usual casserole because that seemed to be a staple every time we had breakfast. I thought maybe it was time to do something a little different. Of course, I had to make sure it was edible. So I made 2, one for us to eat and one for work. This would even make a great dinner! Who doesn't love breakfast for dinner?
Super easy to throw together and into the oven.
Ham and Cheese Breakfast Casserole
1 bag of Potatoes O'Brien (with onions and peppers)(cubed hash brown potatoes) 8 eggs 2 cups of chopped ham (I used a ham steak) 2 cups shredded cheddar cheese ( I use sharp) Salt and Pepper to taste Place the frozen O'Brien potatoes on the counter for about an hour to thaw or place in the fridge overnight. Place the potatoes in a bowl, add the cubed ham, and 1/2 of the cheese and eggs ( mix eggs in a separate bowl) and mix well. Spray a 9 x 13 casserole dish with cooking spray and pour in the mixture. Top with the rest of the cheese and bake at 350 degrees for about 40 minutes (ovens may vary) Check to make sure the eggs have set before removing from the oven. Can't find the Potatoes O'Brien-just add your own onions and peppers, half cup each. Saute in a pan until softened prior to adding to the mixture. Like more cheese! By all means add more or change up the kind of cheese. The possibilities are endless!
This is my son's favorite breakfast. I have been making this french toast for years. I usually use just sandwich bread but I had this loaf of french bread sitting out just waiting to be used up. Just the smell of this cooking wakes him up from a deep sleep. I just love it, if I need him up all I have to do is mention that I made this and he is up lickity split. I do not make this too often but both my kids really enjoy it. I always say I am going to make more that we will eat and freeze it but I never manage to do that. I'm sure this would be great frozen and pulled out on a busy weekday morning to feed hungry tummies.
A couple weeks ago I took a photography class with a great photographer in our area. I took a photography class when I was in elementary school and I absolutely loved it. I got a new to me camera after starting this blog and really wanted to learn how to use it other than the auto setting. Getting this new camera made me realize how much I enjoyed taking pictures. A lot of information was given that day to process in my poor little brain. I love how she follows my blog and wanted to help me improve my pictures and touched on that in our class. I hope I can make her proud with the pictures I will post from this point forward. I have realized that my camera may not do what I want it to do and may have to look into making a big investment in the camera I have always wanted. Until then this one will do, its much better than what I had.
This french toast is so easy to prepare. I have done the ones where you make it and let it soak in overnight and they are good but this one just feels right to me. Besides my kids love it and that is all that matters to me.
French Toast
3 eggs
1 cup of milk
1 teaspoon of vanilla extract
1 tablespoon of cinnamon
Combine all the ingredients in a bowl and whisk until combined. Heat up a skillet with a pat of butter. Cook on medium heat until browned. You can add extra cinnamon, granulated sugar, or powdered sugar over once they are done. Serve with maple syrup. Enjoy!
Do you ever have one of those dishes that you just have to have at certain holidays or occasions? For me it is this sausage and egg casserole.
Every Christmas morning we make this casserole. The tradition started with my parents. On Christmas morning all of us girls and our families would come together at their house, eat breakfast, and open up all our presents.
Now that my parents are no longer with us we do things a little differently than before. We still have a special breakfast, but it is with our kids.
After breakfast and spending time with our kids, we gather together with family for dinner and presents.
This recipe is so easy to prepare and so good that its great for dinner any night of the week. For some reason breakfast foods always taste so much better when you eat them for dinner.
This is a very versatile dish to play with. You can change the ingredients and make it something totally different.
With the two basic ingredients the rest can be switched up and the possibilities are endless.
You can change up the cheeses, mix them, add peppers and onions, bacon or mushrooms.

ingredients:
6 eggs
2 cups shredded cheddar cheese
1 pound of sausage, cooked and crumbled
2 packs of crescent rolls
instructions
Cook and crumble on pound of sausage. Crack 6 eggs into a bowl and mix with cheese and cooked sausage. Pour into a 9x13 casserole dish lined with crescent rolls. Bake at 375 for 15-20 minutes. Ovens may vary and this may take longer. Check for doneness with a knife inserted in the center. Enjoy!
