Although the recipes calls for crushed pineapple, you can use chunks if that is what you have on hand. Just chop them up a bit before placing into the recipe so you get the same consistency.
Can I make my own whipped cream?
Yes, you do not have to use whipped topping. A homemade recipe can be used in place of the whipped topping.
How do you store the cake?

HOW TO MAKE PINEAPPLE SUNSHINE CAKE:
Cool completely on a wire rack. In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice (or other half of can). Spread over the top of cooled cake.
What really brought this cake over the top was the frosting. You really have to make this cake just to try the frosting. It is just something about that whipped topping, pineapple, and vanilla pudding combined that makes you want to skip the cake and just eat it with a spoon.
