You do not have to use a boxed cake mix. You can use any yellow cake recipe in place of the boxed cake mix.

Although the recipes calls for crushed pineapple, you can use chunks if that is what you have on hand. Just chop them up a bit before placing into the recipe so you get the same consistency. 

Can I make my own whipped cream?

HOW TO MAKE PINEAPPLE SUNSHINE CAKE: 

Preheat oven to 350 degrees. Spray a 9 x 13 pan with cooking spray. In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice (or half of a large can) and mix well. Pour into prepared baking pan and bake for 25 - ­30 minutes, or until toothpick inserted in center of cake comes out clean.

Cool completely on a wire rack. In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice (or other half of can). Spread over the top of cooled cake.

Awwwe Melissa, I'm so sorry for your loss.. and you're right, it's a pain that is unlike any other pain.. it's like it cuts right through your heart.. lost my husband back in 2001 and I went through my own hell for at least 10 yrs.. have 1 Son who was 6 when he passed and that made it even more heartbreaking.. but it's true what they say.. take the time you need to grieve.. no one can tell you when your grieving time is up but you.. now as for this recipe, OMG I can't wait to make it tomorrow.. thank you Melissa and keep your chin up because your Dad is looking down making sure your doing what you love.. :) <3

I just love this cake and I get lots of requests for it from family, friends and coworkers but while at a family picnic I noticed that the younger kids did not seem to be eating it so I asked the mother of one of the younger kids why and she told me it was to plain looking so next time I made it I used a Funfetti cake mix now my Pineapple Sunshine Cake is a hit with all ages 1 thru 101
