A holiday staple


Corn Pudding is one of those recipes that is always on our holiday menu. This is my sister Donna's recipe that I found in my moms recipe box.

Before my grandparents passed away we always spent the holidays at their home. All the extended family would gather together and have a feast. Once they were no longer with us, that tradition disappeared.

So when Thanksgiving rolled around it was just us. Our parents and my two sisters and I. Instead of my mom slaving in the kitchen all day, we starting going to Shoney's every Thanksgiving. As kids we thought that was pretty cool and it became a tradition for our little family. We did that for many years until my sister got married. Then my parents decided it was time to make some new traditions.

Each Thanksgiving Day is spent with our loved ones. It started off with just our parents and our spouses. Then kids came along, and then some of them started having kids. That little family that once had Thanksgiving dinner at Shoney's has now grown into one big happy family. Each holiday we each make a few dishes and add them into the mix. It usually starts off a few weeks ahead with a call out to see what dish everyone is bringing. When the big day comes, the guys are usually hanging out by the TV watching football while all the girls are in the kitchen. The kitchen comes alive with love and laughter. Making sure all those beloved dishes are just perfect for the main event. Then when it is all done, we serve it up buffet style and see just how much we can add onto one plate. Each year I think we add another side dish or two into the mix. Because you know its all about those side dishes.

This will be our second Thanksgiving without our parents. I'm not going to lie, it is hard thinking of all of our holidays of the past and knowing they won't be here to celebrate with us. Our parents were the glue. The pillars of our family. The ones that made sure we always came back together as a family. My sisters and I will continue on the traditions that our parents laid before us. And starting this year, we will be dining on our parents china that was always safely tucked away. Mom wouldn't use it. Life is just too short and its just too pretty to sit in a box. Here's to new traditions!

Yield: 6 - 8

Corn Pudding

A sweet corn casserole that is a holiday side dish staple.
prep time: 5 minscook time: 45 minstotal time: 50 mins

ingredients

1 (15 oz) can of corn, drained
1 (15 oz) can of cream style corn
3 eggs, beaten
1 Tablespoon flour
¼ cup milk
¾ stick of butter
¾ cup of sugar
Dash of salt
Dash of nutmeg

instructions

Mix together sugar and flour. Add beaten eggs and mix until combined. Add all remaining ingredients and mix well. Add mixture into a greased 2 quart baking dish and bake at 350 degrees for 45 minutes to an hour. Stirring twice while baking. 

NOTES:

Recipe can easily be doubled or tripled for a crowd.
