Crock Pot Pepper Steak is an easy and delicious recipe to make on any night of the week.
One of the first recipes I learned as a new bride many moons ago was for green pepper steak. It is one of those recipes that my husband just has no control over when I fix it. He just devours it.
The funny thing is when we first met, green peppers were not on his list of foods. You see, he was super picky and his mom really did spoil him. She would make him special meals when he didn't want to eat what everyone else was having. Even when they would go to someone else's home to eat, she would bring along his favorites. God love her, she was a saint.
So the fact that green pepper steak is one of his favorite meals is amazing in itself. It is an easy meal to fix any night of the week. I decided I wanted to create a crock pot version so that we could enjoy it even more on super busy days too.
This recipe is perfect for those less desirable cuts of meat that are always tough. When they are cooked low and slow it produces a tender, flavorful, and delicious meal. This recipe is just as delicious if not even more so than the stove top version.

Crock Pot Pepper Steak
Cooked low and slow to produce and amazingly tender and flavorful meal any night of the week.
prep time: 10 minscook time: 7 hourtotal time: 7 hours and 10 mins
ingredients:
1 ½ to 2 lbs beef steak, cut into strips
¼ cup soy sauce
1 teaspoon garlic, minced
¼ teaspoon ground ginger
2 teaspoons Worcestershire sauce
1 cup beef broth
¼ teaspoon ground black pepper
1 teaspoon sugar
1 small onion, sliced
2 large peppers, cut in strips (any color or combination)
1 Tablespoon cornstarch
½ cup cold water
instructions
Cut beef steak into strips. Add all ingredients into crock
pot except the cornstarch and water and a ¼ of the pepper strips. Stir and cook
on low for 5 to 6 hours. Add the reserved pepper strips. Combine the cornstarch
and water. Stir into the crock pot. Continue to cook for another hour or until
thickened. Serve over rice.
